Cars 2 Racetrack Cupcakes

My little cousin's birthday was at the end of June and he turned 4 years old.  He wanted Cars 2 cupcakes so I decided I would make the cupcakes in the shape of a 4.  The cupcakes were iced with buttercream frosting mixed with Cocoa Powder.  The track was outlined with Dark Chocolate Frosting (dyed black) and melted to look like a smooth finish.  The tires were made with marzipan, and the cars were Lighting McQueen, Mater, and Francessco all from Cars 2.  This is by far my favorite cake that I have done!!

Strawberry Shortcake

This is My recipe for my incredible strawberry shortcake cupcakes:

You can either make the cake with a yellow cake mix (I use Duncan Hines) with the ingredients needed or you can use a recipe for yellow cake.

I make mine into cupcakes.  After your cupcakes are cooled completely, you will fill the cupcakes with cool whip as a filling.  you can do this with the Wilton filling tip.  Then you will top the cupcake with coolwhip and add a strawberry on top.

Yellow Cake mix Recipe (for two 9 in rounds so baking time may vary)


Ingredients:

  • 2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla
  • 3/4 cup milk

Preparation:

Preheat oven to 350°F. Grease and flour 2 9-inch cake pans.
In bowl, combine flour, baking powder, and salt with a wire whisk.
Cream butter and sugar until light and fluffy. Beat in eggs, one at a time.
Add vanilla and mix until completely combines. Slowly add flour alternately with milk.
At end of addition batter should be smooth. Divide between 2 pans.
Bake Yellow Cake Recipe for 20 to 25 minutes. Cool 5 minutes in pan, then invert
onto a rack and cool completely before frosting.

Big Quench Slushie from Glee

Glee cupcakes: white cupcake that sits inside the cup.  the cupcake is iced with vanilla frosting and dipped in either blue, purple, or red decorating sugar.  insert twizzler for the straw!

pigs in a blanket

my pigs in a blanket as inspired by karen tack and
alan richardson's "Cupcakes, cookies, & pie, oh my!"




my mom loves pigs so i made these for her!  This is one of my favorite designs i have done!  The pigs were iced with cream cheese frosting that was colored pink.  the ears, snout, legs, arms, and tail were made from pink marshmellows.  for the blanket: sour drops were used for the blanket and was laid on top of an 8 inch cake.

who doesn't love pizza? Cake? Cake that looks like pizza?
The crust is buttercream frosting that was dyed with a copper and brown icing color.  the sauce is melted red vanilla icing (i used Duncan Hines) since buttercream frosting can't be microwaved because of the powdered sugar.  It is topped with grated white chocolate to make up the cheese.  the toppings are red fondant pepperonis, black colored candy melts for the olives, and green candy melts for the peppers.

This past weekend was Derby which is a big event in Louisville! This is a cake that is designed to look like a white derby hat with a black ribbon and bow in the back with red roses in the front in honor of the running of the roses!
